Lemon Feta Chicken
Ingredients:
Procedure:
- 4 boneless skinless chicken breast halves
- 2 to 3 tablespoons lemon juice
- 1/4 cup crumbled feta cheese
- 1 teaspoon dried oregano
- 1/4 to 1/2 teaspoon pepper
- Place chicken in 13-in. x 9 in. x 2 in. baking dish coated with nonstick cooking spray.
- Pour lemon juice over chicken; sprinkle with feta cheese, oregano and pepper.
- Bake, uncovered, at 400 degrees F for 20 to 25 minutes or until chicken juices run clear.
Pumpkin Chip Drops
I made half these cookies with chocolate chips and half without, and both turned out really good.

- 1 cup butter, softened
- 1 cup sugar
- 1 cup packed brown sugar
- 1 egg
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 cup quick-cooking oats
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1 cup cooked or canned pumpkin
- 1 cup (6 oz.) semisweet chocolate chips
Yield: 4 dozen.
- In a mixing bowl, cream the butter and sugars.
- Beat in egg and vanilla.
- Combine flour, oats, baking soda, cinnamon and salt; add to the creamed mixture alternately with pumpkin. Stir in the chocolate chips.
- Drop by talespoonsfuls 2 in. apart onto greased baking sheets. Bake at 350 degrees F for 9 to 12 minutes or until golden brown. Cool on wire racks.
